This garlicky sauce/dip/dressing is great with wraps, pitas, in salad, with grilled meat kebabs (Souvlaki), falafels… you name it.
Tzatziki is actually super simple to make.
- 1 small-med cucumber, peeled
- half tub of plain yogurt
- 2 cloves garlic
- drizzle of olive oil
- cheese grater
Use cheese grater to shred cucumber (the smallest holes, but not the star-shaped ones you use to grate Parmesan cheese).
Grate garlic (use star holes for garlic because you don’t want large pieces of it in the tzatziki).
Dump it all in the yogurt, add a touch of olive oil and mix with a spoon.
Let sit for a bit so the garlic flavour has a chance to set in, and then you’re good to go!
